Making my first batch of homemade root beer using a ginger bug.  Added lactose for richness supposedly...brown sugar, vanilla, and a root beer tea composition containing a mess of “root stuff”...we’ll see.  Individual components seem expensive yet if it works I may continue... :smt006

Haven't been on NCKA in a bit, so here is a little covid catch up on playing around in the kitchen!

1 - Lobster Miso Soup
2 - Lobster Spring Roll on homemade Kelp dish
3 - Scallop, sweet shrimp and chorizo corn chowder
4 - Seafood foraging platter
5 - Tom Kha soup with fish and crispy rice
6 - Bonito and mango Mosaic Sushi
7 - Seared Bonito in tomatillo salsa with Homemade Flower Tortillas

Seafood is fun and been learning a lot about cooking thanks to the shelter in place time.

I hear ya’, whenever I get off the saltwater I have a sugar carbonated craving and I found myself drawn to a ginger ale to calm the transition from water bobbing to land, regarding the tummy.  Hence, make your own, which is better.  I can control the sugar in the recipe.  Don’t need it super sweet... :smt006

Yeah, the sugar is what I'm not a fan of. I do like fever tree ginger beer.

I’ll show this to my son who has a casual cooking competition going with his Italian buddy who’s a gifted chef at age 14. Mostly about the eating for them but maybe we can up the style factor Did you do culinary academy or just doing your own inventions?

Anyway very nice looking food there Would like the recipe for tortillas if you’re willing

Hey man! Thanks for the kind words. The coca cola safety gear is hilarious.

I actually founded a catch and cook comp last year that was fairly successful (38 competitors and a pro chef judge panel). Maybe your son would dig it! We're just getting the gears greased for the next one mid 2020 which is likely going to be virtual (I think we can make it work).

I found a passion for cooking about a year and a half or so ago and just been playing in my tiny apartment kitchen ever since. Slowly accumulating more culinary toys and gear. I'm very jealous of nice kitchens now... or even kitchens that have space for a cutting board ha!

A lot of the recipes can be found on our F+F website https://finandforage.com/food but unfortunately I haven't written one up for that meal. I'll make it a priority to do so and get back to you!

I can identify with the tiny kitchen problem, I just put in a gas line to our backyard and am putting an outdoor kitchen to expand the options, maybe even a pizza oven. Not that I’m a great cook, that would be my wife who is a natural Not just being biased, she’s in a class with the best we’ve had all over Spain, Portugal, France, Italy and our Italian friends who are first class Italian chefs

Wouldn’t mind some pointers on how you did the square maki, we did some yesterday with leftovers but all I can do so far is the rolls

Coca-Cola for hydration and energy is a legit thing, I still consider it essential especially as I get older. You get caught in a blow miles from nowhere and get dehydrated and daffy when you need to be able to think most

The only other safety gear I had from 72 to sometime in the 90s was a good wetsuit, compass and a line to the nose of my yak. Anyway this ain’t a safety thread

Showed your pics to my son and he was amazed, he’s going to up his game now

Grilling BFT collar, not sure good timing...shoyu, salt, white pepper, coconut aminos, Trader Joe's umami seasoning..grill, skin side ? timing, flesh side?  3 minutes on high after 6 minutes on skin side...who knows?

Boom!  Hope it’s cooked at the bone...

6 minutes grill medium high on skin side, 3 minutes on flesh side, Siracha Mayo condiment...
