I've made several trips to my local Costco. Almost no lines at the gas pump and most items are well stocked.  $1.50 hotdogs to go only. Gotta wear a mask though.

It’s real good. Maybe my tastiest pulled pork yet. Dinner last night was open-faced pulled pork sandos on home made bread with  Carolina-style finishing sauce, topped with pickled red onions from our garden. And a side of sautéed broccolini with Meyer lemon and a little garlic.

Dinner tonight will be the same, only tonight we have Brussels sprouts and arugula salad instead of broc. I can’t wait!

It’s really easy to make. Find any simple  “no kneed” bread recipe online, follow it, then mix in a cup or so of shredded cheese before you leave it to proof overnight.

Just made some halibut with this recipe. It was amazing!
2 tablespoons butter melted
2 tablespoons honey
Juice from 1/2 lemon
2 teaspoons soy sauce
1/2 teaspoon pepper
1/2 teaspoon Chile garlic paste

Marinate 1 lb halibut portions for 20 mins then sear on high heat for 90 seconds per side. Reduce heat to medium until fish is flaky (was about another 2 minutes).

Served it with some steamed rice noodles Dressed with sesame oil, soy and chile garlic paste. Simple steamed veggies completed the meal.

Sorry, only photo I took was of the last bite before it got demolished! I’ll be cooking this one again.
