I have found that cooking during this time is a great activity.   Of course, I like to cook anyway.  I have noticed that we have gotten much better about using everything we cook and wasting almost nothing.  Our dinners are planned days in advance and whenever possible I make enough food for a couple of meals utilizing refrigeration and freezing to preserve so we aren't eating the same thing two days in a row.  The ingredients we have available are often the key to what's for dinner.  In the past I would decide what to make and then buy any needed ingredients.  We are not going to the stores so there are sometimes limitations on the ingredients available by delivery from Prime Fresh or Costco.  So far, I would say we have been eating healthier and tastier than prior to the shelter in place.  I'm looking forward to this mess being over but we are really doing well, all things considered.  Tonight I'm making Shepherd's Pie with fresh carrots and mushrooms topped with mashed potatoes.  All food groups in one dish!  Stay Safe!

I'm worried that my "quarantine body" wont fit into my wetsuit when the time comes. We've made a big thing of lasagna, huge batch of chili, big thing of pizza dough, spaghetti and meatballs, etc. That plus a lack of activity is adding the lbs.

I had opposite reaction lol. I lost three lbs wk 1. Catering n snax At wurk wuz pretty Gr8 n we barly stokt anything at home. Wk2 rebounding in a big way, coupld w decreasd activity.  My bike comes bak from shop tmrw n ill hookit up2 the wahoo plus hittin calisthenix2

This is the new favorite recipe at my house. Great for clearing out the mystery fish that has been in the freezer a little too long. Onions, tomatoes, garlic, chilis, potatoes... cheap, easy, and delicious.

We are getting a little tired of our own cooking, so tonight we had take-out from KFC
$20 meal deal; 8 piece bucket of extra crispy, a rather large side each of coleslaw, mashed taters, mac-n-cheese and gravy for the taters.  Oh, and 4 biscuits. This will feed us a couple meals plus I'll use the biscuits in the morning for biscuits and gravy.  Yum!

   Man, that Mud Pie stopped me in my tracks!   
   But I'm working on cleaning out the cupboards and freezer of impulse purchases and past good deals.  And if I ever had the makings of a Mud Pie in the house, they wouldn't be here now anyway.   
   So instead, I'm counting on the internet to help decide what to make with, for example, a can of coconut milk. leftover rice, and a package of pre-steamed black-eyed peas.  Yep, the net came through again and had a recipe for a Caribbean New Year's Eve traditional dish also calling for pumpkin chunks and assorted spices. I haven't seen a fresh pumpkin in months, but in the back of the pantry there was a can of pumpkin puree - close enough, it's not like I'm going to compare the finished product to what mom made.  Tasted pretty good. 
    And I'm running a little low on bread-machine yeast so I remade the Irish Soda Bread from the 17th , even made a whole-wheat version.
     After the cupboard and freezer are near empty, I might go through the stuff in the earthquake box in the back yard, though pickings are slim there -tuna, sardines, jerky and bars.  Maybe I'll be able to get near a Costco in the next month- I went on the first Seniors Morning and couldn't find a parking space!

I would definitely hold off on that mud pie recipe. It’s way too sweet.

Looks like you’re doing a great job clearing out the freezer and other supplies though.

Cupboard is a little light at my house end of the month so here’s was my dinner. Pot stickers pan cooked with sweet-n-sour sauce added at the end, green beans, onions, mixed peppers, sweet corn grilled and tossed into ramen noodles (ramen noodles era not my first choice but all we had in the pantry) tasted pretty good. Took about 15-20 minutes.
