Just an FYI for those who were thinking of using ling cod head for soup, it tastes great!

I caught a ling the other day and realized the head makes up a huge portion of the body. There seems to be a lot of meat inside. My mom took the head, removed the gills and jaws, and cooked it up in a "Maeuntung" korean fish stew and it was amazing! The soup has a flavor similar to crab soup. My kids ate the eyeballs.

They also made halibut tempura and, yes, halibut sashimi. My dad and uncle are chefs who have owned seafood and sushi restaurants for over 40 years so I figure they know what they are doing.

If I brought anything but whole fish home I’d get the boot. After my Albion adventure I brought home 3 nice lingcod, 1 canary rockfish, and 2 blue rockfish. I filleted the lings and then blanched the bones and head. The meat was scraped off the bones and molded into cakes then fried. Tamarind was added to the broth, along with a few of the cakes, and some vegetables.

Last night we had the canary fried whole.

I’ve caught 8 Halibut so far this year and 90% we have eaten as sashimi. The other 10% came off the blanched bones.

My mom enjoys eating fish head more than any other part of fish.  I try to take the whole fish to my mom, who lives in LA, as often as I can.

I wish I had an industrial freezer at my apartment! I eat poke like once a week and would much prefer to make it myself. I usually only sashimi pelagics when I go blue water hunting.

I guess I've got to try ling head soup. That photo looks fantastic.

I've always felt bad about not using the heads, hell I once put a how-to on here about curing the dang skins so I think using the head ought to be included in my repertoire.
I've always been stoked to give the heads away at any public cleaning station, but I'm so rarely at one.

I've been hoping some neighbors saw me cleaning fish and asked for the heads, but alas, I might have to start making soup, cause I'm starting to think I'm wasting way too much meat.

I think some of it has to do with how we're raised , or lack of education on what  edible . It's not that any one is wrong it's just what some have experience with .

I have friends ( yes I actually do) that say " oh I love fish " offer them Ling or Salmon belly or collars and cheeks and it's like a fart in church

They " love" filets that's the extent .

What kills me is watching guys / gals catch small RF , filet them for what a cut the size of a deck of cards .. what a waste , If I were to keep something small like that and I do on occasion the whole fish is getting steamed whole in the rice cooker ,baked whole or deep fried in the wok

Plus bring the grandson of Immigrants I was just taught not to waste thing

I don't cook whole fish often enough. I've always been stoked when I've done it, usually "Hawaiian style" on the grill, scaled, slashed, and seasoned. I gotta get out fishing now :smt005

Yeah, I need to remember to dig in the freezer tonight to cook something tomorrow. all this talk of whole fish! I really do want to try one fried.. done baked and steamed, and indirect on the grill ( love an open flame ) need to get it in some corn starch, and fry it.

IDK just my .02

For small RF, after cleaning, I typically vacuum pack them individually for grilling later.  I enjoy grilled whole fish with very light seasoning. 

Some times we grill the leftover from filleting fish on a campfire.
