I told BigJim I’d post this recipe a few years back and just remembered Better late than never

It came from an old Japanese guy who was a striper fisherman and I used it a lot when I was still fishing stripers, but it works with any saltwater white meat fish that’s fresh



Boil water in a shallow pan with a lid

Drop in cuts of filet, cover and turn off the heat

In a sauté pan heat up peanut oil with some sesame oil, throw in some chopped up green onions and sauté them but don’t let them get brown

Add soy sauce and turn it off

Plate the filets and drizzle the sauce over them

Peanut oil is most of it so depends how much fish youre doing

Dump some into the pan and get it heating up then dump enough sesame oil into it so fragrance is going happily up your nose

For three of us I do the sauce in a little 6” pan 1/4 - 1/2” of peanut oil and sesame oil however much you like that flavor

Probably 2-3 tablespoons not sure, I go by the smell

When it’s hot I throw in the chopped up green onions and 30seconds top a minute dump in a lot of soy sauce

Timing is everything

Best if the onions are still green, before they start to turn translucent but you have to be quick

It works for any white meat fish

If you want to be a little fancier sprinkle toasted sesame seeds over everything

I took my son on a party boat and we brought home a couple of stripers which we fed to our Italian friends, 4 adults and 3 kids and we consumed both these fish in one dinner

My Mom used to do that recipe slightly different, steam the fish, heat the oil very hot but not smoking, top the fish with the raw green onions, drizzle the oil over it wilting the onions, then sprinkle the soy over it,

The whole trick with the other way is doing it fast so the onions stay bright green
