Lake Pyramid in November for lahontan cutthroat trout. I am going Veterans Day weekend with a few friends and would be happy to get you set up with the needed intel

Sonoma coast in December was crazy good to me last year as a first timer.

Lake Almanor should be high on your list. I love the solitude of winter up there. Jigging and suspending bait can kill in the coldest months. The lake had a great jumbo brown population in years past, and should still be solid even with loads of fishing pressure during the warmer months.

Steelhead fishing is an option in winter. Waddell Creek in Santa Cruz county is in your area and worth taking a look at.
Follow your local rules detailed in the freshwater regulation.
I would wait until after a good rain then go and see what the guys are doing that fish the creek.
I would imagine small artificials (spoons and spinners) and float and jig would work well.
