Just curious, I bought bonito flakes and just noticed its expired. I mean its a dried fish. Can it really go bad?

if it gets moist from the humidity and then goes fuzzy yeah, but if it stays dry it should be good. I did buy some maldive fish (sri lankan/indonesian dried tuna) once that got a strong ammonia odor to it so i tossed that.
