Super easy, I went with green sauce.
8- snow goose breasts
2 cans of green enchilada sauce
12 Anaheim peppers
4 cloves garlic
1 large onion
Masa
Corn husks

Slice onion and garlic, add to crockpot with one can green sauce, four anaheims and the breasts. Cook on low for 12 hours.
Pick breasts out and shred. Add can of sauce to meat.
Fire roast anaheims, wrap in foil when charred all around, set aside to cool. Scrape skin off, cut end and remove seeds.
Prep husks w masa, add slice of pepper and meat, wrap up and stand open end up in steamer for one hour.
Put a quarter in the bottom of the steamer so you know when water runs low. Add boiling water only to the steamer. Easy peasy!

Seriously the best tamales I have made to date. The only thing I dislike is the "crockpot" after taste of the meat. Next time I will simmer on the stove to get rid of that taste. I am being overly cynical, but if you can make a better finished product, why not right?
