Uni Pasta

1 tbsp EVOO
2 Louisiana hot links diced 
2 tbspns chopped garlic
1 cup halfnhalf
1/2 tbsp Martillo mix see recipe below
1/2 packet of Philadelphia cream cheese
1lb spaghetti cooked al dente
1 cup Uni purée
1/2 cup grated Parmesan cheese
Freshly ground black pepper
2-3 cups reserved hot pasta water

Martillo Mix

3 parts Lowry’s seasoning
2 parts Garlic powder
2 parts Onion powder
½ part Paprika
½ part Cayenne powder
½ part Kosher salt

Brown the diced hot links in a tbsp of EVOO.
Sauté the garlic in the pork fat.
Add the half n half over medium heat.
Add Philadelphia cream cheese and the Martillo Mix and stir until cheese is dissolved.
Add the cooked pasta to the pot and then pour uni over the pasta.
Gently fold the pasta in the sauce.
Add the Parmesan cheese and freshly ground black pepper.
Add hot pasta water to form a nice smooth sauce.
Sprinkle more Parmesan over each serving if desired.

The ling cod was generously dusted with Martillo Mix and seared in EVOO.

That looks great thanks for sharing! Going to have to try this. I tried a recipe for uni pasta before. It was very basic but delicious. This looks like it would be even better.

I have a frozen ling filet in the freezer, now I gotta go catch me some uni so I can try this out, looks amazing!  :chef:
