This works flawless and is as easy as it gets when you have to deploy. Set up is a breeze.
This is everything you need to be in business minus a few screws.

Anchor and line consists of a bungie attached to a piece of rope attatched to boat fender. Another piece of rope attached to a stainless carabiner.
A plastic extension cord wrap. Anchor rope and small float. Clip and anchor.
All you will need after that is a metal eyelet, a cam cleat, and about 6 feet of 3/8 braided poly rope. ( It floats )
I don't recommend the clip I use to attach the anchor to the rope, but I like it so that's what I use.
I also use a 5lb anchor. This way I don't have to worry about using chain and it holds me just fine in he strongest of current provided I have the correct amount of rope out. I like to keep the amount of anchor rope out to a minimum. That way there is less side to side sway of the kayak in the current.
Take the poly rope and either knot it at one end or use a fid and thread the end of the rope into itself. Just as long as one end is thick enough so it cannot be pulled through the metal eyelet.
Attach the eyelet as far back on the kayak as you want your anchor to hang from. Angle it a little too.

Thread the poly rope through the eyelet so it hangs downward. I threaded the line through itself at the end so it is thicker than the diameter of the rope and cannot be pulled through the eyelet.

Attach the cam cleat in easy reach of where you sit.

Run the poly rope through the loop in the bungie on your anchor line.

Put the other end of the poly rope in the cam cleat and you are good to go.

A slight pull forward and the poly rope releases from the cam cleat. Nothing to fumble around with. Just let go and as you drift away the bungie will slide off and you are free of the anchor. There is nothing for the anchor line to snag and the release is very clean.
To retrieve the rope hanging in the water, just paddle backwards a little and it will come to you.
I plan on doing the exact same thing to the front of the kayak. I will only need to install an eyelet and another cam cleat, which I already have. Another piece of poly rope is a no brainer.
Forgot to mention. Nothing is attached directly to the plastic winder. There is a small loop in the beginning of the anchor rope which I hook the caribiner for the float on. Should anything happen to the plastic winder, my entire system is still together and intact.

Very nice, I have to rig up an anchor on my Marauder, I just might give your idea a whirl.

I'm definitely going to revise my rear anchor rig and do it like this.  It's so simple and effective and much easier than trying to reach behind me to get the line into the cam cleat.

Besides, I haven't cut any holes in my kayak in a few months... I'm due.
