Had some leftover turkey, and miners lettuce we picked, so I made soft tacos. I wish I had more protein to load it up, but only had so much left from supper the other night. I added some cheese, lime and sour cream with good salsa (not in pic, figured this was prettier lol) and it was very good! What do you guys use miners lettuce for other than salads?

The other day I was trail running Quicksilver park getting thirstier than chit. Chewed a few stalks miners lechuga for some quick fluids. More for mental boost than actual hydration. But def thankful they around.

As u noted it can also serve as nice garnish.

Love it. Normally we use the miner's lettuce in salads, but I've tossed into anything that needs a little leafy green. Not sure if I've done the tacos with it, but I will now!

I cook our miner's lettuce; place in a pot with a little water or a veggie steamer.  The lettuce will reduce down and turn dark green, just like spinach.  Add salt and butter.  So much better than spinach!  A full paper grocery bag will cook down to only 3 or 4 servings though. 

BTW, trim the stems/flowers by pinching off before cooking.  Just the circle leaf is all you cook.

I use miners lettuce as you would uncooked spinach in salad. Miner's lettuce, sliced hard boiled egg, bacon, raw sunflower seeds, mushrooms, Italian or Ceaser dressing. Then add water cress and calendula petals if you can, to round that thing out.

Try making it into a pesto sometime. Omit the basil in your favorite pesto recipe and add Miner's Lettuce or any combination of wild greens in its place. Fun spin on a classic.
