Not sure if I can keep a carrot cake fresh for the potluck since I would have to make it ahead...so I will keep brainstorming!

Freeze it and then store it in an ice chest with a little dry ice.  I've kept stuff for several days that way.

Be sure to wrap the dry ice in a few layers of paper. So you don't burn the cake.

Change of plan.

I am going to try a small batch of smothered Collards. I have the collards in abundance in the garden, herbs, and already bought the bacon.

It will be a noble effort, if'n you like cajun?

I have 3 gls of black bean soup with Italian Sweet Sausage - mild - little salt - made last Sunday, and sitting in the freezer and ready to pack!  Chopped jalapenos, cilantro, sriracha and onion salsa on the side, and a salt shaker.

For a cold ice chest, try putting a sleeping bag over it, and draining the water daily.  Put the drained water into a plastic bottle and back into the ice chest.  That keeps the ice in chunks longer and the ice chest clean.  :smt001
