I tried this out on two gifted del Valle mutants. Pretty good, but I brokenthr roux badly. Also I did em whole not in pieces. Thankfully the skeleton gets extracted pretty easily. Will try again bc I love saucy recipes.

Need to work on your cooking skills Martin.  :smt005 :smt005 :smt005 This recipe is the only way I cook trout because it is just that good and Karen loves it. The sauce is not hard but there is a timing thing when browning the butter. I use medium high heat and it browns in a few seconds and thickens in a few seconds. I use a cast iron pan to get a nice sear on both sides. Even with smaller trout I fillet out the rib cage and spine before cooking. It cooks more evenly and is a better presentation.

No kidding!  I hardly ever cook!  But w RCG opening next week maybe I'll do more. 

Even if you fillet out and dissect over the spine and ribs, trout appear to got like a million pinbones extending transversely to the lateral lines, at least thought the rib section. How do handle those buggers? 

I extracted a bunch when I pulled out the intact spine and ribcage but also missed quite a few.
