Hey all-

Looking for a way to keep lings lasting longer without freezing, I love smoked fish.  Anyone ever smoke lingcod?  I've stumbled on a few pointers but could use a real step-by-step play-by-play if anyone has done it before.

Funny you posted this! I just tried it yesterday. Wife bought me a big chief smoker, so I thought why not. I smoked the fillets a little long, 3 1/2 hours. Next time I'll go around 2 1/2. Came  out good otherwise. Not sure how long they will stay good though.

If I have a lot of smoked fish I freeze it.  It thaws out just fine.

I've had them smoked in Applewood and then serve them soaked in olive oil and red hot chili peppers. Yum!
