Here are a couple of ways we like to eat rockfish.  One is an easy recipe that works as well on salmon and halibut.  The other is just easy and good.

Start with fillets and saute in olive oil or butter.  I usually season with Montreal Steak Seasoning or Cajun Spices but Salt and Pepper also work fine.  Saute fillets 3-5 minutes per side depending on thickness.  Remove the fillets and deglaze the pan using a glass of white wine.  Add 1-2 table spoons of Dijon mustard and stir until smooth.  Then for the low cal version, simply reduce until thick.  Alternatively, add 1/4 to 1/2 cup of cream before reducing.  Pour a small amount on each fillet.  Yum Yum.

The second one is more cheating than a recipe but it was really good.  I bought a package of Thai Spicy Peanut Baked Chicken mix at Albertsons.  Then coated rockfish fillets with the spice mix.  Sprayed a Pyrex dish and baked at 350 for 15 minutes.  Served with brown rice and artichokes.  This was really easy and very tasty.  I will definitely stock up on that spice mix.
