Unfortunately that's the one Tim was talking about... cuz that's the one I caught when Tim and I was fishing in the Sac River a few days ago...or is it because mine was twice as large as the one he caught???? :smt044

Quality over quantity!  :smt003 Mine was bright silver. Yours was brown.

Just smoked one from the sac that was poor looking at best added extra brown sugar less salt and dry brined for 24 hrs then skipped the rinsing step. I was leery but it was given to me so I tried it. Just ate some this morning and it was surprisingly good. Now that I have the practice fish out of the way I am going to smoke the 31 lb. fish that was given to me as we'll that looks pretty good.  :smt001 (I am calling the white meated fish I just did, "diet smoked salmon" it's not nearly as rich as what smoked salmon usually is.) p.s. I think not rinsing is the key so it is extra sweet kinda like smothering a low quality cut of meat with BBQ sauce to make it palatable.

Fishaholic, you and I both know it is just salmon envy!  All of my fish this year have had dark red meat.  Look better than the market fish.

 :smt013 :smt013 :smt011 :smt011  Crab bait is not an acceptable use for a dark salmon.  If you keep and kill a salmon, you should eat it yourself.  If the meat isn't worth eating, don't keep it so that is has a chance to spawn.  I guess one exception in my book would be a hatchery salmon.

I will smoke all salmon I manage to catch as long as its not covered in fungus.  Silver to dark, all smoke to me.

Jim knows!!!!! Smoke em!!!! Don't fish for them if your worried about catch and release. They usually die after the fight. Let um run or call it YUM YUM YUM!!!! Sport salmon fishing is done on the big blue....
