Depends on which hand you are holding the rod so you can turn the crank. If  you are holding the rod in your left hand you land of the fish on the right (starboard) side, right hand port side.

 Take a little extra time to play out the fish. Work it in as close as possible to your upper thigh or hip before you lift and secure. Reach with you net, gaff or fish clip. You can hang your lower legs over the sides for extra stability

^ this is me as well.  the drift direction/ direction the kayak is facing, which side the fish comes up on, it varies.
 I prefer the left side though, since my paddle is usually strapped to the right side while drift fishing.

I am right handed and like the fish coming up on the right if I am going to be gaffin the fish, if lipping or netting it doesn't matter. But that gaff shot needs to sink home and reaching over my body to use my right hand makes it difficult and usually a missed gaff shot unless I get lucky.

Usually the right. I use right hand reels mostly and the rod is held in my left across the yak to the right. I can go both ways though, but don't spread that around.

I let the fish choose but if I can, the left side cuz I am a lefty.  throwing the legs in the water really increases stability.  also learn to not lean too much port or starboard.

I reel lefty so for me it seems natural to hold the rod in the right hand, net or gaff in the left.
That way I'm not crossing my body when tending to business.
The kayak is a lot more stable than you think.
Imagine 2 tall invisible walls extending straight up from each side of your kayak. Keep your head inside the walls and you'll be just fine. Remember, the body follows the head. Put your head too far outside the walls and your body will follow.

Starboard side.  This is how I like to do it - my 1st but.
