I got STOKED out yesterday by LapuLapu and Lucky13!!

Two beautiful Albacore delivered to my front door!!!!

THANK YOU fellas!!!!

Now....fileting is done and I have plans for the meat....

I don't wanna waste the heads though!!!

Anybody have any recipes/ideas??? 

I do Ling heads rubbed in olive oil and wrapped in aluminum foil with cilantro and garlic and then on the BBQ...but I have no clue what to do with an Albacore head!!

Any ideas welcome!!

I just prepped one for my mom yesterday and she made this dish called packsio. I'm not sure how to spell it but LapuLapu might be able to correct me on that. But the recipe consist of water, ginger, onion, jalapeno pepper, salt and vinegar and of course the fish head.
I prepped the head by cutting the gill plates off, chopped the head down the middle and cut that into smaller pieces with out popping the eye. boil your water add all the ingredients mention above and let slowly boil until the liquid reduces just a little bit.

Have not tried paksiw using albacore head but I'm sure it will be great!  I think I'm going to make some tonight.  That sabaw (soup) is good cure for our hoarse voice after over doing it on karaoke night.

My brother (a sushi chef) told me he doesnt use albacore heads because there's not much meat on them, and whats there is really oily. You could roast it like they do hamachi kama. Butterfly the head and collar, sprinkle with sea salt and grill both sides. Pick the meat and dip it in ponzu when serving.
