And Now For The Best Part....Smoked Albacore Bellies..

We caught 21 Albies so lots of fillets and an equal amount of bellies. During the filleting process we even cheat a bit leaving a bit more on the bellies and at the same time making the fillets more like a round loin.

Layer bellies in a bowl salting with kosher rock salt between layers. Twenty minutes and then rinse with cold water. Paper towel dry and let rest until tacky.

Place in smoker making sure there is plenty of room between pieces of fish.

Fill smoker pans with cherry wood (alder is an option) and put the lid on. We leave in the smoker for a good 16 hours to allow the meat to firm up.

Remove fish and place in freezer bag and refrigerate for a good hour or so with the bags open so they don't steam up.

Vacuum the finished product so that the remaining moisture balances out over a day or two minimum. We freeze after that....ENJOY for months!!! or Share in our case :smt006
