Big huge giant +1 on the turbo fins for the outback.  I have had mine for four years and just put the turbo fins on it before my last trip, along with the sailing rudder... what a huge difference it made to speed, acceleration, and maneuverability.   
Never trust a man that doesnt like to fish...

With any demo, try carrying it across the parking lot, loading and unloading it by yourself.  I have an obstacle course ihave to go around now that the neighbors kid daihatsu 4x4 is non reg.  But I developed a system for loading and unloading my Quest which is a fine Hobie, sans peddles.

I regularly load and unload two outbacks off of my truck with little to no help.  I wouldn't call it easy, but it really isn't a huge deal either.  I'm 5'10' and of average build... so I'm no strongman by any means.  My truck, by the way is a '02 F250 with a 4" lift and 35" tires.  I have a rack for the kayaks that sits 2" above the top of the cab which means it is just barely even reachable for me.  Despite all that, loading on unloading isn't a problem.  I am only 35 years old though.
