You beat me to the "punch" line. What a set up Rob!!!! Anyway. I just got a PM from Daleshark and I will be doing the beans for the event. Do you think one big "turkey pan" will do or should I plan for more? They will be baked beans with a few added things to make them "flavorful."

I did a trial run on pork butt yesterday.  I smoked 21 pounds worth and ended up with 14 pounds of finished product.  There's about 1/3 loss during cooking as the smoker does it's magic.  My rub formula is dialed in, my hickory wood with a touch of oak thrown in is good as well.  It takes a full 12 hours to get it so it just pulls and falls apart.  The hardest part is the sauce.  Not too spicy and not too sweet I think for this crowd.....

Also, someone mentioned, I think, that the vets may be bringing some of their own chow?  It would help a lot if we knew how many to plan for.  If it's for 100, that's great, but I don't want to end up with an extra 50 buns or 20 pounds of meat if they are bringing their own.  Worse would be to not have enough!

They are only bringing drinks and "snacks" for the Vets...

  Figure on feeding a 100...  don't sweat the money, I'll reimburse or whatever is right for ya...

and can't say Thank you enough to all of you for taking this off both Franks and my hands...

Skipro, Homemade rub and sauce ? Where have you been my whole life? It sounds like you know your way around a pork shoulder. Your skills and effort are greatly appreciated. 25lbs of cooked pork should do it. I was wondering about having some of it without sauce. Some folks like it naked.  We could always sauce it on-site. Shicken, we would love to have you in the H.O.W.galley. Splashdown, I am looking forward to having baked beans . Thank you for stepping up and helping out. Better make sure it is one of the big turkey pans full up to the rim.

I'll put the sauce on the side.  Personally, I like to 'butter' my bun with sauce and then put on the meat and have a small cup of sauce to dip into.  Probably not feasible unless someone had a whole lot of those little plastic dipping sauce cups.  I'll just bring a quart sized jar of sauce and we'll go from there.   
I also will be getting the Kaiser rolls.  Best roll for a sammich like this.  Holds together, plenty big enough, doesn't fall apart and bites off clean. 

I'm a little concerned to re-heat the pork.  I think it tastes best piping hot right out of the smoker.  If there was AC power there, I'd toss in the smoker and do it right there on the spot.  No AC I bet though,  right?

I got hooked into smoking meats after going to the Reno Rib cook off many years ago.  I got a Cookshack smoker.  They have a forum (who doesn't if even northern California kayak anglers have a forum!) where I've learned lots about the craft.
