I am going to set up the fish-taco shack. I will bring the peanut oil, the batter,chipotle crema and some homemade salsa. I believe someone is bringing the tortillas and someone else is bringing a custom tortilla pan. I just can't remember who. We still need cabbage,radishes,avocados and more salsas. Who here has any kind of salsa-making skills? Oh yeah, we also need a buttload of rockfish filets.

I'll gladly contribute fish for tacos.

I have a large burner set up with big cast iron skillet that I can bring and set up next to you to fry rockies/cabs under 20 inches whole as well.

Will do my best to get abs and uni for shared eating as well.

I'm on the hook for the 24" disk to flash fry a zillion corn tortillas in the fish-taco shack.   I'm also bringing my LP tank of course.

Do the kids get anything special made/provided for them, or do they have to just suck it up and have to eat the crazy big boy food?   If kids are happy, that makes mama's happy, and that makes daddy relaxed.  I'm not bringing my kids or mama on this trip, but kids are still important even if they are not mine. 

Maybe get a sub-menu going for them?

INSAYN, I've got a similar burner/tank set up, but that tortilla disk is SWEET!

Will bring mine and my big skillet for anybody who gets some small floater rockies or cabbies that they don't want to filet and would rather fry whole.

Anything under 20 inches fits in there pretty good, sometimes I gotta chop the head or tail off and fry it on the side.

Have you been to NCKA potluck before? the head count is your less worries, its finishing and tasting all the food there it what worries me a lot even if you take pinch on everything you will end up filling up your plate and oh oh jack taco stand will be there, ummm I can almost taste it...

          I can bring produce and a Gallon of salsa that my Mom will make the night before I leave, it will keep good up to a week on ice.. make it 2 gallons . 1 gallon of roast tomatillo salsa and 1 gallon of red tomate salsa  :smt044..Peace Out...Jose
