Most guys I know use and like their Dexter Russell fillet knives.  Lots of choices for blade styles.

I like how the title says HOW TO filet a tuna.....More like WTF!!! I wonder how many fish they do a day to get that profficient, especially considering that meat is top shelf and not cheap!!

I like the move where the guy hangs the fish by the tail the runs the blade along the spine to butterfly the fillets away from the backbone.  So cool.
