Hey Y'all,

I was watching yet another episode of Iron Chef the other night and they mentioned steamed abalone liver; I'm like, ya ok, that sounds like it might be good and I'm all for utilizing another part of the resource. There was no mention of how it was prepared, so I thought I would ask the many great chefs on the sight. Anyone have any experience either eating or preparing this part of the abalone?   Cheers Mike

Never try it before.  Did a little search and found this:

"Don't toss the liver! This is prized at most sushi bars (awabi kimo). Steam it and eat with a little ponzu, out of this world!"

I  am interested for sure....just a little unsure what part is liver and what part is gonad and what is the gut/poo sack??

So from that picture it looks like the liver is the same as the gonad...I squeeze it looking for pearls all the time...

I'll try it once season opens up again for sure!!

I used to save the gonad/liver for one of my parents friends. They really prized them. To me, they're just guts, yuck! :smt044 Especially if you don't even like raw oysters......

Oh yes. Opening weekend at Reef. Lower parking lot if the weather is doable. Bring your airsick bag. You have to be able to hold it down for at least 5 minutes.
