Happy early St. Patrick’s Day! Meat and potatoes never looked so good!

3 tablespoons butter
3 tablespoons all-purpose flour
1 tablespoon salt or to taste
1 tablespoon pepper or to taste
1 small onion, diced
1 tablespoon minced fresh parsley
2 cups milk
4 large potatoes, boiled and sliced
1 (12-ounce) can SPAM® Classic, thinly sliced
1/2 cup crisp buttered breadcrumbs


1Heat oven to 375°F.2In saucepan, melt butter; blend in flour, salt and pepper. Cook over low heat, stirring constantly, 3 to 4 minutes. Add onion, parsley and milk. Stir until smooth; cook until thickened. 3In casserole, alternate layers of potato and SPAM® Classic. Pour white sauce over top; sprinkle with breadcrumbs. Bake 30 minutes.

I love in Hawaii's grocery stores that have an isle dedicated to spam.
My grandma used to make this thing she called a minnesota burger and served it over a sour dough french roll.

Take a can of spam and cut into 1/4 in pc
cut up one green bellpepper into 1/8 in pc
cut up a green onion
get one can of tomato paste
1 package cram cheese
grate in 1/2 cup of cheddar cheese

Mix all the above ingredients together, put in on the french roll and broil it till the cheese bubbles and enjoy! :smt001
