What an awesome trip. Id go just for the food.

its on my to do list. I know this is a hard question to answer but tackle wise (rod/reel) what is the minimun you need to have a good time. I have a few set ups that I think would work but I'd like to know for future plans!!!!

Min would be 3 set-ups
30lb, 40lb and 60lb all with a good free spool and a strong drag.
The boat will have the heavy trolling gear so don't worry about that.
All the rods and reels can be rented fron the boat at about the same cost as the line so if it's your first trip you don't need to purchase all those rods.
I have already started booking for next year (Sept 21-Sept 28) and this will be a 7-day.
