In my kitchen with a Chef's Choice diamond sharpener. It has two sets of stones, one set to sharpen, then the other to finely polish. I find I only need to do this once a year, for the rest of the year,I just use  a steel.

They butchered my Tojiro DP 8.5in knife.  The guy ground down one side too much and created an asymmetrical edge.  I'm sure my knife came w/ a symmetrical edge.  I didn't notice until I got home.  Its still plenty sharp and cuts well.  

Next time I will use Bernal Cutlery.  :-)

I have used the guy at Mollie Stone for the last two years on my kitchen knives, and I can't complain.  A big chef's knife is still $8.00.  Don't get me wrong I can do small blades without a problem but the bigger ones are a pain in the butt for me.

Yeah, mine too...can't seem to get it thru our kid's heads that the good knives do not go into the stainless steel kitchen sink after they're washed.  :smt012  I sharpened them myself using my Spyderco Sharpmaker last time, but it's a PITA when they get this bad.  Plus I've been bad to my Spyderco folder at work and really f-ed up the blade, so I'll let them put a new edge on that too.

+1, the higher end diamond hone Chef's Choice sharpeners are great. After a complete sharpening of all my kitchen knives through every stage of the sharpener last year, I only need to touch up the edges in the last one or two stages every couple months. You can find them cheap on eBay.
BTW, you should check on how these professional places sharpen the knives. At the knife shop in the Fairfield Mall they use the Chef's Choice sharpener  :smt005

I've gone to the guy who parks his VW van outside of New Leaf on the westside of Santa Cruz. He's got a sweet setup with two electric wheels with stands, all modular to fit into his van. It was $4 a blade last time I had him do all my Henkels kitchen knives.
I've been using a steel for touchups.
