make a compound butter.  mix softened butter with minced garlic,cilantro,and canned chipotles in adobo sauce. keep it in the fridge. Pan fry(saute) filets in oil til med-rare, lay a slab of your compound butter on top and dive in face first.

Make a aluminum foil boat big enough to fit your halibut fillets. Now coat the boat in olive oil or spray with pan.  Take your fillets, give them a light dusting with lemon pepper(optional) and place them in the boat. Take your favorate salsa (hot Pace picate sauce) and pour it over the top of halibut. Now crush some Frito's or tortillas chips and cover the salsa. Next take some grated cheddar cheese and sprinkle over the crushed chips. 
I normally put it in the BBQ at 350'+- (medium/high)for 12-15min.  I'm assuming you could bake it also.  Once its done, top it off with avocado slices, maybe sour cream if your like(I don't) and serve. Hell ya! I made it last night :smt003
