About the oysters:  I read somewhere that the oysters and clams in Tomales Bay are safe to eat.  Seems they don't concentrate mercury like the sharks do.

Certain species concentrate mercury and other metals worse than others.  Oysters and clams...nope. sharks and rays...oh yeah.  Halibut not so much and they don't live there year around.

Thanks for the heads up on this Sean. I'm always wary about the bay fishes including halibut as well but I've never seen any data on rockfish. Does anyone know how much murcury is in the average rockfish caught on the marin or san mateo coastline?

Those sardines and mackeral really have been a treat this year. My wife and I canned up a dozen pints from my last trip and they came out great. Fish tastes that much better when your not worried about toxins!

You got it Kiel,  but aren't you headed for the Island soon?  I might have to eat it myself.  Wouldn't want it to spoil

Canning sardines is really simple. I did them with a pressure cooker just like you would can tuna the only difference is you don't need to add any water at all with sardines.

I added a pinch of salt and a few slices of jalepenos to ours and they turned out great. You do need to use a pressure cooker to get a high enough temperature to kill botulism and then just follow the directions on the cooker for canned fish.
