First of all, for all of youse that have never paddled a kayak without training wheels, SIKs indeed do some things better than SOTs. Secondly, the Tarpon 160 DH is the "kayak of your dreams" for more than a few kayak anglers.

My advice: Keep your eyes open and fingers ready, then snag a second 160DH when one pops up for sale here...

What's a kayak with training wheels????????

Ask yourself - what do training wheels do on a bicycle? Answer - they dramatically reduce the consequences to a rider with poor form/balance (at least to a point). A "kayak with training wheels" has been designed with primary focus on reducing the consequences of being paddled by someone with poor balance/form/skills. Almost exclusively,  sit on top kayaks fits into this category. Surf skis and wave skis would be somewhat exceptions (though it is still easier to mount a surf ski than it is to re-enter a capsized SIK). And it's not as if there aren't any SIKs that have "training wheels", as most "recreational" SIKS are designed with very high primary stability and are hard tracking for their length at waterline (LWL).

SIKs are not as good a platform for fishing as SOTs, generally speaking. That said, back east, the kayak of choice for a big group of anglers chasing smallies on the rivers is a a WW SIK.

I also find it a lot easier to fly fish from a SIK, as the line sits very nicely on top of the spray skirt. Since I'm doing C&R, and only need a small box of flies/streamers, the inability to access the heap of gear needed for some other types of fishing isn't an issue.

My SIK laughed during the launch/landing at Pomponio, then turned around to go back out for more...

While paddling around SE AK, while my upper body was getting drizzled on constantly, my legs stayed nice and toasty dry under the spray skirt. Yet I still managed to troll up some dogs and silvers even though I was in a SIK.

I'm still not trading in my T160DH though :)
