I keep the smallest ones that I want for bait that day and throw back the larger.
I throw a 16-foot diameter net with 1/4-inch mesh.

WOULD YOU///DO YOU/// EAT THOSE GUYS???...!!!...????
They have biggish scales...you'd hafta scale them.

I'm really kinda dubious but I think I'm wanting-to-be-convinced

I'm not a fan of shiner, walleye, or striped perch.  Mushy flesh and with the exception of the striped variety, not much flesh to eat.  People eat them and love them though, to each their own.  To be fair though, I have only fried all of the above.   Steaming them whole might be a better bet and then covering them with a tasty asian sauce of some sort.

Jacksmelt on the other hand I am a fan of....  Good on the grill or broiled.

I'm a huge walleye fan (growing up in MN, you kinda have to be). Besides frying them, we found that a great way to prepare them was to fillet, and instead of removing the skin, leave it on and cook them on the grill, skin side down. Put a dollop of butter on the top side along with some spices (lemon pepper and garlic salt were my favs). Then just cook them without flipping until the meat starts to flake.

The skin protects the meat, and normally this kind of fish would fall apart on the grill, so it also holds it together. To eat it, just slide a knife down between the sking and the fillet as if you were skinning it.

I'm not sure, but it might work with your perch too!

This walleye is referring to walleye surfperch, not the freshwater walleye fish.  They're one of the smaller surfperches.  The average size is about the size of your hand.  Good bait if you get a really small one.
