This one is inspired by the tequila-spiked shrimp ceviche you might see at a restaurant.  It starts with "cooking" some diced halibut in pretty much a grapefruit margarita before combining it with cucumber, tomato, avocado and grapefruit chunks.  Some jalapeno, Fresno, serrano or habanero, or some combination add heat while cilantro adds some fresh brightness.  We pile it up in a bowl and scoop at it with tortilla chips.

That's what I'm talking about. I am salivating thinking about that grapefruit as an ingredient in ceviche. Yum. I have had with mango . Definitely have to have your favorite Chile with the fruit/citrus.
