Do I got this halibut. I was tired so I simply filleted it. 

The next day, I pondered the options. I went with how my parents would have most likely handled it.   Chinese style steamed fish.  It’s usually a whole-fish option. 

Salt it, steam it, plate it, add green onions/ginger, dump hotass oil over the aromatics, drizzle of soy sauce, get a bowl of rice…

Das da way!  Sometimes I change the cultural profile with that technique.  Example,   Italian, with fresh basil, sun-dried tomato, kalamata capers… :smt006

I had just watched a video of that cooking style. Looks delish. Adding scalding oil over the greens must bring out a great taste and aroma.

Okay, this doesn't compete with those, but when you are working from home and want a quick lunch from the bag of Kokes in your fridge:
Toaster oven to 350. Mix soy and maple syrup with some garlic powder, smoked paprika and maybe ginger powder. Spread over split kokanee on foil and bake for around 10 minutes or about when the sugar in the sauce on the foil starts to put out that semi-burnt sugar smell. Green onions would make a great garnish if you have em.
Not as good as smoked Kokanee but I'm digging it all the same.

Snarcbite turned me on to a dish similar with whole rock fish so good. Didn’t catch a salmon but had this yummy dish instead
