Traditionally the "clay pot catfish" dish is cooked in a a clay pot but we don't have a big clay pot so they're cooked in a pan but using same ingredients.  Here's our finished product.

Dang, that looks tasty! I've only had catfish breaded and fried. If I ever catch one, gonna have to give that a try - looks really yummy!

For California catfish, I'm assuming the large ones and particularly the large ones from Clear Lake and maybe from Berryessa would not be desired.
Where would one target the cleanest catfish for eating? I'm thinking targeting fish in the 18"-24" size would be the way to go.

I'd probably go with fish from a stocked lake, like one of the EBRPD lakes. I'd like to learn how to target catfish - have only caught them from shore as incidental catch while striper fishing in the delta.
