Cheese should be cold smoked, or around 120.  My old Little Chief did a good job of that on the highest shelf.

Thanks for the tip Al.  I put them on the lower shelf.  Will try again with your suggestion.  My Little Chief doesn't have temperature control 😔 to set it at 120 degrees.

Do you mean open it a little  or completely remove the door?

I just lean it against the opening spaced a crack.  You need to play around with how much heat you're letting out for how big of a crack.

Thanks for the tip.  Maybe I should smoke the cheese separately from the Halibut.   Anyway the cheese tastes good with smoke flavor.  The fresh baked bread goes well with the smoked Halibut.
