Got a nice little Ling collar yesterday that I wanted to try and cook up but ended up getting too lazy to do anything fancy.

Ended up just throwing the entire collar into an air fryer after rubbing it with some oil and seafood seasoning.

Came out pretty nice and the meat was tender and mostly boneless

Recipe:
1 Ling Cod collar whole
olive oil 1-2 tbsp
Seafood seasoning of choice (I used red lobster since it was in reach)

Preheat air fryer to 375
add in the collar and cook for 13-15 minutes
pull the collar out
eat your Ling Wings and enjoy

Can do the same thing if you spatchcock the head open with a cleaver. Delicious and great presentation for dinner. I prefer to do the traditional Kama style, involving brining, then blanch frying in oil on low heat, then placed onto a ripping coal grill. Lot of work involved but when served a nice crispy collar with salt, grated daikon, shiso leaf, lemon, and ponzu sauce it's just like a sushi restaurant.
