Hard to understand why this could have taken so long, especially when he was obviously making stuff up from the start...

But isn't states of matter a physics thing?   

And yes, compressed water is a thing, just not at the pressures generated by a plastic bottle.

Yeah you're totally right, it is technically compressible and will do so a mile below the surface.

That said, under normal conditions it's typically considered incompressible for whatever reason. I'd guess it's more to do with engineering than physics or chem (i.e. Taylor series are short).
