When an "Old Timer" showed me how to cook stripers years ago he explained that it was important to take the fillets a step further by cutting them into smaller pieces, approx. 2-3" X 4-5-6", and then slicing,"filleting",  these chunks into into 1/4" thick cutlets. This way you can hold them up to a light source and clearly see any worms that might be embedded in the flesh and cut them out. This extra step has another plus - the thin pieces, when battered up in flour, egg and fresh sour dough bread crumbs, cooks really fast in a hot pan with an 1/8" of oil and everything cooks evenly. So, just take the extra step and enjoy!  Tom
