I’m a total rookie. I understand tides, just not how it affects fishing there. What online tide charts are you using fir the area?   I assume the water has a tidal current. Is it hard to pedal against?  Is it tough to hold your position?

I’ve scoured google earth images.  Is it easy to get turned around in in the sloughs? 

It looks downright fascinating there. Far for me. Without COVID, I’d get a hotel and really explore.

The delta is a great place to fish due to the variety of fish that can be caught.  I usually pick up a pocket tide book and map of the delta at the bait shop.  My fish finder also has mapping and the ability to track my route as you mentioned its easy to get turned around in the delta.  The currents are manageable in most parts but depending on the tide swing, and certain areas, the water does move pretty good.  When anchoring in the yak, I've had no problems holding with a 5lb mushroom anchor.  I've been out in the rio vista area in my boat, and have been blown off the water with whitecaps.  There can be a lot of debris (fallen trees etc) in the water, so you have to keep an eye out for one coming down river while anchored.   Good luck and be safe.
