Thanks. I'll check this out soon. I made burong isda in January using herring and that batch is just getting funkier and funkier. It's 7 weeks old!

I never used herrings. I used tilapia and gurami. Sometimes black rockfish. Mine dont usually last a month it get consumed right away. As far as my understanding is concerned it needs to be well salted. Fish needs to be thoroughly clean. I used my moms recipe which is unfortunately not measured.
