600 yds of line, wow, seriously wonder how it would taste or what's the texture, living in that pressure and temp.

   You could get way deeper than that in the Monterey Submarine Canyon.  You'd have 2400 FOW about 12 miles out from Moss Landing. But I'd suggest heading out about 5 miles from Stillwater Cove South where you'd be in about 3000 FOW.  The necessary sinker to get reasonably straight down might weigh more than you and your kayak, but there you might hook up with:

My guess is that it will taste like Monkfish....a little like lobster. 🧐

So cool! Note that when first approached it was perfectly vertical in the water with its pectoral fins pressed against its body. Combined with reflective skin this would mean it would have almost no silhouette when viewed from below.

Somewhat related, I recently learned that counter-illumination is a common camouflage technique for fish in the twilight zone-- the easiest way to see them would be to spot their silhouettes against the faint light from above, so they emit light from their bellies that matches the ambient light from above.
