I don't have that model, but as for Excalibur in general I'm still using the one that my dad bought for my mom as an anniversary gift when I was about 7 years old.  Going like a champ nearly 40 years on.

No im going to do it the traditional way, except ill do over an oak fire. In the handbook there are several recipes for jerky.

I used to make plenty of jerky in mine. I would recommend turkey tho. Made a friend of mine really sick. I was fine though, so who knows.

Can that one do air flow only?  Or does it have some minimum temp.  I have the model with a time that does air flow only in addition to setting temps.  Love it.

Orange and pear slices come out nicely. Just don't cut them too thick or too thin.

Yes I have the same model. Made lots of delicious jerky and dried fruits etc. it’s all good and nobody has been sick.

There are good directions in the manual for most things.

Enjoy!

The Excalibur has side air flow which works much better than the round ones. I have a 9 tray and a 5 tray and I like them both. They do have heat.

I have one of the cheap round dehydrators and make jerky all the time. I send it to my kids out of state. None of us have ever have a negative side effect. Terryaki sauce, cayenne pepper, liquid smoke and if you want some sweetness add brown sugar.
