I'm planning to purchase a Lowrance Elite 7ti to mount on my Hobie Pro Angler 14 2017 model. Can anyone recommend a good mount to use for this?

you can buy the ram 1.5" ball setup, or just do like i did and build my own. I did it with 1" balls instead and they work fine.  RAM does recommend the 1.5" ball though.

I used starboard, but a thick cutting board will work as well.

The reason the 1" ball works fine for us kayakers is that we don't go fast enough to worry about the extra torque on the ball.

Ram 1.5" and ram arm for total scan transducer on my PA. I mostly use the total scan(side scan) for lakes, the arm can be a pita on the delta. I have a HDI trans in the trans cavity. I can easily switch bake and forth.
