I bought a fish cleaning mat at the ISE in Sacto 2 yrs. ago.  It is cut proof and non slip.  Can't remember the tackle company that sells it.  It is similar to impact mats used in gyms.  Combine it with a Lifetime 36" height table,($33 Amazon), and you have a fish cleaning station that won't break your back or your budget.

This stuff should work.  Wish I could remember the name of the company I bought my mat from.  Good luck to you brother Darius!

Expensive stuff, though...

Check the scrap bin at Tap Plastics. Sometimes they have some surprisingly large ones in there for $5 or less.
There's always money in the banana stand.

I bought a cutting board 48''x18.5'' at Scheels in Sparks, NV.
It has a carry handle cut in so it's kind of like carrying a brief case.
Fits nicely on the tailgate of the truck.

i use a section of an old vinyl counter top. set it on a cooler and do it outside. spray Everything down after.

Dong Vinh in san jose sells kitchen/restaurant supply. should have plenty of cheap boards.

You can get large pieces of star board from tap plastic fairly cheap. Use a jig saw or router to shape.
