Length, model, etc absolutely varies based on the person, water locations & fishing style.

Correct. I prefer a 16" in almost every place I fish. I do have kayaks from 12-16 and several different widths, seating arrangements, etc, but I still prefer my 16'.

I've been known to hop the ocean with my wilderness survival inside Pungo kayak.  I feel as comfortable in it as I do in my sot kayaks.

I like the 16' over the 13', but the 13' fits easier in my garage.

I've got a SOT and a SIK, both 14'. Both work fine, but being less restricted on the SOT is nicer for fishing. I will happily use the SIK for leisurely freshwater casting though.
14' Necky Dolphin, fast and wiggly, no room for anything.

I have the hobie outback. You can stand and fish out of it no problem. I stand in mine while drifting down the feather river all the time. You can put a 25lb thrust motor down through the hole where the peddle drive goes. There are many other 12 foot kayaks you can stand in. But I went with the outback bc it's not to heavy and has Mirage drive so I can navigate shallow water and going up stream is a breeze!

I have SIK and it gets very uncomfortable for long periods of time. Plus if water gets in it gets me wet plus stays in the seat because it's deep therefore making me really cold. I'm looking for a SOT too. Headwaters had a great deal today that someone snatched up real quick. It was a Old Town Predator XL great condition for $650... Gone within hours. They often times have great deals you just have to watch constantly.
