So I just picked up my hobie pa14 yesterday and was not patient enough to build a stand before my purchase and too cheap/drive too fast for a trailer. While gathering up my materials/ ideas for a kayak cart to store it I ran 2-10 ft sections of pvc under the kayak using the two pieces of T-bar to raise it just enough giving the pvc a nice curve while still supporting the hull. Thoughts? Safe? Potentially damaging?

That's basically how i store my AI, only its on a trailer.  Look on the hobie forum you'll find loads of folks using PVC bunks.  For the AI i found that 1.5" was the best fit
