You need to add it as "overlay data".

It's page 12 of the manual.
http://www.lowrance.com/Root/Lowrance-Documents/US/ELITE-5X-7X_HDI_OM_EN_988-10652-001_w.pdf

1.) From the sonar, chart or downscan page, press Menu
2.) Select "Overlay Data" and press "Enter"
3.) Select "Configure" and press "Enter"
4.) Press "Menu" and select "Add" and then press "Enter"
5.) Select "Date/Time" category and press "Enter"
6.) Select "Time" and press "Enter"
7.) Press "Menu" and select "Return to Overlays".  Press "Enter"
8.) Press "Menu", select "Done Configuring" and press "Enter"

One of the Data items I like having on-screen is voltage.  Helps you to keep an eye on what the battery is doing throughout the day.  Another quick tip is to press the 'Power' button & use the Hibernate function when anchored up or tied off to kelp fishing ... saves a LOT of battery power for those instances when you dont need the fishfinder/gps necessarely 'on' but a quick push of the power button brings it instantly back to life w/o the wait of a normal startup.

Im at work and don't have the book here...is the voltage another one that can be displayed then? If once I enter these things will they be there next start up or will I have to enter each time?

Voltage (and a bunch of other cool stuff mainly for boaters) are in the same sub menus.  Once it is in there, it should stick for the next time too unless you do a software upgrade, a restore defaults or soft/hard Reset.
