I figured I'd post this recipe as it is one of our favorite breakfasts that has to do with fish. I like using Shasta Spots because they are such a clean canvas to work with.

10 boneless fillets (any smaller white fish will work)
5 Tbs olive oil
4 Tbs finely chopped purple onion
1 tsp yellow curry powder
1 good pinch of fresh rosemary
1 roll of Ritz Crackers
1/2 stick of butter
1 dozen eggs
Salt to taste

Put olive oil in large skillet on low. Add fish, onion, curry powder (sprinkled around) and rosemary. Sautee and turn fish until white and falling apart. Add butter and let it melt, turn butter in. Crush Ritz in it's bag, add Ritz, turn in. Beat eggs (add water or milk until it's the consistency you like). Add eggs and turn until the mixture is dry. Add salt to taste.

Eat by itself, with a tortilla or toast. Great for a long day on the water!

That sounds like the BOMB!  Might have to try that at LRC next weekend.
