I have a fish skin phobia. Wont eat it on any fish. Funny thing is, I had a bird skin phobia too, but Hank Shaw got me to try pheasant skin, then Saul Trujillo got me to try duck skin. I eat bird skin now. SO there is hope I may be able to be talked into trying fish skin someday!  :smt008

Love crispy skin on most fish and fowl.  Suck out marrow from bones too.  Grosses my wife out though

OK, in all fairness, I tried a little bit of the skin.  As you can see, it had an interesting char.  BUT i couldn't sock it all away b/c a little chewy still.  and no fish sauce (hey I am  VN after all, right???)

What I did eat of its was pretty tasty.  cut into strips, think it may have served some textural purpose in another dish, sort of like bonito flakes maybe?

As long as the scales are removed and the skin is good and crispy, I love it!

If you want to eat the skin, make sure you get it nice and crispy then take the fish straight off the grill or pan and plate it SKIN SIDE UP. Otherwise the skin gets soggy and floppy as it sits in fish juices, sauce, whatever...
