Welcome aboard!  You're only 1 hour +20 minutes from Lake Almanor.  You should definitely give it a visit if you're into freshwater fishing.

As for Revo 13 vs Outback: I can't speak much for the Outback since I've never taken one for a spin, but I've owned Revo 13s for the last few years and absolutely love them for lake fishing.  They have a lower profile than the Outback and are QUIET.  Something I've noticed with Outbacks is they make noise with hull-splash, whereas the Revo cuts through the water.  Stealth can be very important in freshwater.  As for speed, I can't say I saw any difference when my brother was pedaling his Outback and I was pedaling my Revo 13 side-by-side last week.  However, I've heard that if you have to paddle, the Revo is preferable because it cuts through the water easier.

The Revo 13 holds its own in saltwater.  I've taken mine on the ocean plenty of times and in rough conditions.  However, I think the Outback is better suited to saltwater.  They look a bit more stable, and the raised sides reduce the amount of splash-over that can occur in rough conditions.

But like you said, the decision should come from testing both on the water and seeing which one fits your style.  Either way, they're both excellent fishing kayaks.
